I think boiling is faster and you don't risk burned spots, but otherwise I don't think it matters. However I also don't think boiling would make potatoes watery unless you don't drain and dry them (turn out on a towel or shake them in the hot pan) before mashing.

I need to make pie, damn it. Any kind of pie!
